Hats off to the Duke and Duchess of Cambridge

I don’t know about you, but after the Royal Wedding, I’m ready to royally crash. I think I’ve had just about all the excitement and revalry I can handle for one day. I can’t imagine how tired the royal newlyweds must be!
The entire day was so magical, touching, beautiful, sentimental… I could go on and on. My head is flooded with beautiful images from this momentous day, but there’s one thing I won’t soon forget - the hats!
Say what you may, but I thought they were all absoluting charming and British in every way. I wish ladies in the US wore wild toppers like that.
You can attribute it to my over active imagination or just my present state of delerium, but seeing all these immensely creative and elaborate hats, I couldn’t help but make a few {quite hilarious} comparisons. See for yourself, it’s quite uncanny…
and how could we forget…

Some of them were downright comical, but I applaud these brave women for being so fashion forward. All day I can just hear the lines of Dr. Seuss’ Go, Dog. Go!
Hello again. And now do you like my hat?
Yes. I like it. I like that party hat.
Good-by!
     Good-by!

Quinoa for Breakfast

After my episode of syrupy goodness, I thought I would tidy things up a bit with a breakfast that’s light and healthy – quinoa.
Up until about a month ago, I had no idea what quinoa was and I surely didn’t know how to pronounce it (keen-wah). After seeing this post on My New Roots and this post on Joy the Baker, I just knew I had to try quinoa for myself.
Here’s a little Hump Day education… quinoa is actually a grain and was one of the staple foods of the ancient Inca civilization. It is often called “the mother grain” due to its high protein content. Quinoa can be substituted for any grain in almost any recipe, so the possibilities are quite endless.
When cooking quinoa for breakfast, think oatmeal… only lighter and slightly nuttier in flavor. In Joy’s breakfast quinoa recipe, you basically cook the quinoa and top it with all things yummy and healthy: fresh mango, toasted coconut, almonds, applesauce and a splash of milk.

A perfect way to start the day. Tell me, have you ever tried quinoa?

Royal Wedding Bliss

There’s no escaping it – everywhere you turn, the world is obsessed with the Royal Wedding. I’ll admit, there are some things that are just a little over the top, (I mean who really needs a royal wedding refrigerator?), but in a time when disasters flood the news channels and economies are in the tank, I think the world is ready for a bit of happy news.
I never thought I would get so excited about the wedding of two strangers, but I am pure giddy. There is just something so magical and exciting about all of it. What a huge event, what a special day! Can you imagine being Kate? I just can’t fathom the magnitude of this day for her. And sweet ol’ Will, he’s grown up in the public eye and is about to share the biggest day of his life with a billion people.
To kick off the wedding countdown we’re gonna hold a vote today on Blue Eyed Yonder. I have two royal wedding inspiration boards coming your way today, themed “His” and “Hers”. Check back to take a look at the boards and tell me which one makes your heart flutter. Simply leave your vote {his} or {hers} in the comment section and don’t forget to tell me about your plans for watching Will+Kate’s big day!

The Donut Hole

So, remember I told you we had one of the best breakfasts ever while on vacation? You didn’t think I would just tease you and leave you hanging did you?
We over heard a lady talking at the pool one day about this great little restaurant called The Donut Hole. I mean with a name like that how can you go wrong? On our last morning there, we loaded up the car and decided to hit up this little joint on the way out of town, and boy am I glad we did!
I ordered a tall stack of pancakes topped with fresh bananas and powdered sugar…

Mr. Blue Eyed Yonder ordered the “everything” special, and when they say everything… they mean everything. Pancakes, eggs, hashbrowns, bacon, sausage, ham and a biscuit. Whew!

Littlest sister ordered a cheesy omelet with hashbrowns and a biscuit. If you can’t tell by the pictures, the portions were huge! We could have shared easily. When we all got our plates we kind of looked at them like this…

“Umm, how in the world can they expect me to eat all of this?”

“Mmm, it’s a pretty yummy challenge either way!”
Needless to say, as good as it was, there was no way we could have finished it. There was just something missing though… how could we make a trip to the Donut Hole and not have a donut?
You see, they’re real clever like that. They make you pay your bill at the donut counter. How can you resist getting a dozen fresh-baked donuts for the road?

We couldn’t.

We brought back a variety to yummy treats: original glazed, devils food with chocolate icing, coconut, raspberry-filled, glazed chocolate cake, glazed blueberry cake and even sour cream.
Happy hearts, happy bellies. That’s a sweet ending that just can’t be beat.
So you have make a pancake promise with me. If you are ever in the area you have to swing by the Donut Hole. It’s one sweet little restaurant you won’t soon forget.
